225g self-raising flour
2tsp baking powder
225g soft butter or margarine
Preheat the oven to 180oc.
Grease and line two baking tins (20cm diameter).
Place all the ingredients (not the jam) in a bowl and mix everything together until well combined., preferably with an electrical whisk.
Divide the mixture between the two tins.
Bake in the middle of the oven for approximately 25minutes (don’t open the oven door to early this can cause the cakes to sink).
Leave the cakes to cool for a few minutes before removing the tins and leaving to cool on a cooling rack.
When the cakes have cooled completely place the first cake up side down on a serving plate and cover with jam. Place the second cake on top and sprinkle with a little sugar.
