1 tsp vanilla extract
250ml plain flour
1/2 tsp ammonium bicarbonate
Preheat oven to 150oc.
Put butter and sugar in a bowl and mix well.
Slowly add the oil and whisk until fluffy (easiest done using an electric whisk).
Add the vanilla.
Mix the ammonium bicarbonate and flour in a separate bowl and gently fold it into the first mixture.
Split the dough in two and roll on a table until finger thick. Divide into 20 biscuits each and gently roll in your palms.
Put baking paper on two trays and place the biscuits on the trays, gently press down with a fork.
Bake in the middle of the oven for approximately 15minutes, the biscuits should be pale yellow and will crack slightly.
Leave to cool on a cooling rack.
Replace 50ml of flour with cocoa powder and follow recipe above.
