Muffin Base:2 eggs
300ml caster sugar
1tsp vanilla extract
4tblsp cocoa powder
150ml plain flour
100g melter margarine
4tblsp sugar4tsp cocoa powder
2tsp plain flour
100ml whipping (or double) cream
Preheat the oven to 175oc.
Place 20-24 sturdy muffin cases (preferably foil cases) on an oven tray.
Mix eggs and sugar until fluffy.
Add the vanilla extract.
In a separate bowl mix salt, cocoa and flour then stir into the first mixture.
Place the mixture in the cases and bake in the middle of the oven for 15minutes.
Leave the muffins to cool, the center of the muffins should sink in, if they don’t give a gentle push with a spoon.
Whilst cooling prepare the topping:
Mix all the ingredients in a saucepan and melt on low heat. Stirring regularly simmer until it has thickened.
Place 1tblsp of mixture on each muffin and put them in the freezer to set.
