200g butter or margarine600ml sugar
600ml plain flour
1/2 tsp vanilla extract
100-200g flaked almonds
200-300ml raspberries (frozen or fresh)
Preheat oven to 175oc.
Place baking paper in a large deep oven tray.
Place the butter in a large microwavable bowl (2litre) and melt.
Leave to cool slightly before adding sugar, eggs, flour and vanilla extract. Spread the mixture in the baking tray and sprinkle with raspberries and flaked almonds.
Bake in the middle of the oven for approximately 30minutes.
When the cake is ready leave to cool under cover (easiest to lift the cake out of baking tray and place tray on top).
When cool, cut in squares and enjoy 🙂
