Nut cakes “Gold dust”

Base:
500ml plain flour
1tsp baking powder
100ml caster sugar
150g butter or margarine1 egg

Topping:
300ml sugar
50ml treacle
150g butter or margarine
50ml whipping or double cream2tbsp plain flour
300g mixed nuts (for example: peanuts, cashew, walnuts, hazel, pistachio, almonds)

Place all the ingredients for the base in a bowl and quickly mix to a dough using your fingers.
Wrap in clingfilm and leave to cool in the fridge for 30minutes.

Preheat oven to 175oc.
Remove the dough from the fridge and flatten or press out in oven tray  (approximately 300mmx400mm) and 10mm up the sides.
To prevent the dough from rising in the oven piers it a few times with a fork.
Bake in middle of the oven for approximately 10minutes.

Roughly chop all the nuts.
Mix sugear, treacle, butter, cream and flour in a saucepan and melt over low heat (do not let it boil).
Add the nuts.

Remove the base from the oven and spread the nut mix over.Bake in middle of the oven for 15-20min until golden.

Leave to cool before cutting into squares using a sharp knife.
