250g unsalted butter, softened
1 egg yolk
300g plain flour
Preheat the oven to 180oc.
Beat the butter and sugar together and add the egg yolk and beat again until well combined. Add the flour then mix in the mincemeat and stir until the mixture starts to come together, use your hands to make a dough. Divide the dough two, form each section into 12-15 balls, place on a baking tray, slightly flatten with your fingers or a fork.
Bake in the middle of the oven for 15-20minutes until golden. Enjoy whilst still warm or leave to cool on a wire rack and store in an airtight container.
