Lemon Muffins

Muffins:

  • 125 gram butter
  • 200ml sugar
  • 2 eggs
  • 150ml milk
  • 450ml plain flour
  • 2 tspn baking powder
  • Rind from one large lemon
  • 1/2 tspn lemon extract (optional)

Icing:

  • 350ml icing sugar
  • 35g cream cheese
  • 70g butter
  • 2 tspn lemon juice
  • 1-2tspn lemon rind

Mix butter and eggs. Add the eggs one at a time and mix well. Add the remaining ingredients and put mixture in muffin cases. Bake in middle of oven for 15-20min, 175c. Check that the muffins are baked through by inserting a stick, if the stick comes out clean the cake is ready.

Leave the cakes to cool.

Mix the ingredients for the icing. Put mixture in a piping bag and decorate the muffins.
