3 eggs
200ml sugar
200ml plain flour
1tblsp ground cinnamon
1tblsp ground cardamom
1tblsp baking powder
150ml oil
300ml course grated courgette
(100ml walnuts)

Preheat oven to 175oc.

Place the grated courgette on two pieces of kitchen towel to drain.
Whisk eggs and sugar until white.
In a separate bowl mix all the dry ingredients then gently stir into the egg mixture.
Stir in the oil (it will look like a lot but don’t worry), the courgette (and walnuts). Pour the mixture in a large oven tin (240mm diameter) and bake in the lower section of the oven for approximately 30min.

I replaced the cinnamon and cardamom with 1.5tblsp cocoa powder to make a chocolate version, it worked well.
