Cake:
3 eggs
450ml sugar
225ml milk
225g melted butter
675ml plain flour
1.5tblsp cocoa powder
3tsp baking powder
1tsp vanilla extract
Icing:
300g icing sugar
6tblsp melted butter
6tblsp cold strong coffee
2tblsp cocoa
1tsp vanilla extract
Topping:Desiccated coconut
100’s and 1000’s
Chocolate buttons
Preheat oven to 225oc and line a large deep baking tray (300x400mm) with baking paper
Whisk egg and sugar until white and fluffy (preferably using electric whisk).
Melt the butter and mix with the milk before adding to the egg mixture.
Mix the dry ingredients together and add it to the egg mixture, stir until smooth.
Bake in the middle of the oven for 10-15minutes.
Check if the cake is baked by sticking a toothpick in it, if the toothpick comes out clean the cake is ready.
Whilst the cake is cooling prepare the icing by mixing all the ingredients until smooth.
Spread the icing over the cool cake and decorate.
