100ml plain flour
100ml yoghurt (or 50/50 yoghurt and cottage cheese)
1tsp baking powder
Flavourings (chocolate, vanilla, raisins, blueberries)
Butter for frying
Mix all the ingredients in a bowl. Melt a table spoon of butter in a frying pan and add to the mixture. Mix well and spoon the mixture out in the frying pan. Fry a couple of minutes on each side on medium heat. Serve warm on their own or with jam/honey/ice cream…. (makes 4 pancakes).
