100g ground almond
150ml caster sugar
4 egg whites
4 egg yolks
50g butter or margarine
200ml whipping cream
1/2 – 1tsp vanilla extract
Roasted flaked almonds for topping
Preheat the oven to 200oc.
Grease a springform baking tin and place baking paper in the bottom.
Beat the egg whites until fluffy.
Gradually add the sugar and beat until the mixture is thick and glossy.
Fold in the ground almonds.
Place the mixture in the baking tin and level it before baking at the lower section of the oven for 20minutes.
Leave to cool and remove from the tin.
Mix all the ingredients in a saucepan. Melt and simmer on low heat (whilst stirring) until thickened. Do not let it boil.
Leave to cool and spread over the cake. Sprinkle with the roasted flaked almonds.
