Had promised not to make any more cakes for a while, well that lasted two days. I’m off next week and couldn’t think of a better way to celebrate than a going away cake to the guys at work…who am I kidding? any excuse 🙂 been meaning to make a Victoria sandwich for a long time, being raised in Sweden (which has a massive cake eating culture) I am much more familiar with their recopies but with newly made blackberry jam I thought what better time to try a British classic. Will have to see what the guys says at work tomorrow but at least it looks right.
For a change I’m almost on top of things…Whilst the bottles are being sterilised ready for beer I have managed to upload the step by step guides for the blackberry and apple jam and cereal I made yesterday. Tried both for breakfast and it was a good start to the day. Now it’s just work and uni left to get on top of….
It’s been a busy evening baking muffins for the guys doing the charity cycle ride this weekend. They had put an order in and it was the least I could do as my legs would not survive a long bike ride. These muffins are breakfast in one and keeps me going for ages so hopefully it will help them making it to the finishing line on Sunday. I felt ambitious so decided to take photos of the process of making them. This wasn’t too bad until I decided to make cereal and jam too and took photos of them too….well got as far as putting the recipe for these up, will have to do the other tomorrow after bottling the beer I’ve made. Good night….
Last week started with my rhubarb and strawberry cordial fermenting in the hot British summer….I had been looking forward to having a cold drink in the garden, never mind, it is only failure if you admit defeat so I sieved off the fruit, put the juice in a demijohn added sugar and yeast and now hoping for nice wine instead 🙂 Had intended to try to make a blackberry cake, but ended up with 15jars of jam instead trying to convince myself that that will keep longer than a cake. Had some left over so made some apple and blackberry cordial too, under strict control to ensure that didn’t end up as wine too.
Then it was back to baking for the cake party, made some really pretty individual cakes
and also my favorite blueberry and raspberry pie (well tart but it is a Swedish recipe and they call it paj)
The cake party didn’t go quite to plan, a lot of our friends were away but that left more cake to be eaten by the kind friends that did show up and we had no complaints so the week in the kitchen ended better than it started. Someone even ordered a chocolate cake for a party so delivering that tomorrow 🙂
My husband is trying to raise money for a children’s hospice so I have been busy making cakes for a cake party that he has arranged for tomorrow. We are growing lots of courgettes in our garden so decided that a courgette cake with cinnamon and cardamom would be a good cake to make until I realised I made it last year and didn’t write down recipe….as per usual so will upload it here as soon as I have finished this post.
Have made a Swedish Toscakaka (Caramel Cake with Nuts) which looks great, will have to wait until tomorrow to try it and see if it’s as good as it looks, I’ll keep you posted…
I have been picking lots of blackberries when walking the dog so will make a cake with them too I think…Better get baking 🙂
Trying to find the best apple and cinnamon muffins, still not made it to perfection but apparently there is only so many muffins the guys in the office can eat in one week (5each appears to be the limit).
Moved over to making bread for lunch sandwiches and jam as I finally had enough rhubarb and courgettes in the garden. Love the courgette jam, never wrote down how I made it last year so bit of an experiment but will upload in on here later and I will have it for next year 🙂 The strawberry and rhubarb jam is a take on my favorite crumble I made when I was little. I think it works great in yoghurt with my home made cereal, will have to make some more cereal later for my breakfast tomorrow. Think it will be another day in the kitchen…
